  • 1 1/2 cups (160 g) rolled oats
  • 2 large eggs
  • 1 cup (250 g) pumpkin puree
  • 1/2 cup maple syrup
  • 1/4 cup (55 g) olive oil
  • 1/4 cup (60 g) whole milk
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven
  2. Preheat your oven to 350°F (175°C). Line a muffin tin with 10 paper liners or lightly grease with olive oil.
  3. Blend the oats
  4. Add the rolled oats to a high-speed blender and blend until they form a fine, flour-like consistency.
  5. Mix the wet ingredients
  6. In a large mixing bowl, whisk together the eggs, pumpkin puree, maple syrup, olive oil, whole milk, and vanilla extract until smooth and well combined.
  7. Add the dry ingredients
  8. Add the blended oats, pumpkin pie spice, baking powder, baking soda, and salt to the wet ingredients. Gently stir until just combined, making sure not to overmix the batter.
  9. Fill the muffin tin
  10. Divide the batter evenly between the 10 prepared muffin cups, filling each approximately three-quarters full.
  11. Bake the muffins
  12. Bake for approximately 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  13. Cool and enjoy
  14. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Enjoy!
