This Sourdough Breakfast Sandwich is everything you’ve ever wanted in an egg sandwich, plus a little extra with an easy homemade dipping sauce. Think golden, crispy sourdough, perfectly scrambled eggs, and melty cheese, all cooked to perfection in a skillet over medium heat. It's the kind of sandwich that would make even Burger King jealous!
Ingredients
2 slices of sourdough bread
2 large eggs
1/4 cup shredded cheese (cheddar or your favorite variety)
2 tablespoons butter
salt and pepper to taste
Optional: fresh spinach, tomato or herbs
FOR THE SAUCE
2 tablespoons mayonnaise
2 tablespoons ketchup
Instructions
Prepare the Sauce: Mix the mayonnaise and ketchup in a small bowl.
Heat the Skillet: Start by heating your skillet over medium heat. This is key for getting that golden, crispy finish on your sourdough without burning it.
Scramble the Eggs: Crack the eggs into a bowl, season with a pinch of salt and pepper, and whisk until well combined. Melt half of the butter in the skillet, then pour in the eggs. Stir continuously with a spatula to create soft, fluffy scrambled eggs. Once cooked, remove them from the skillet and set them aside.
Assemble the Sandwich: Make sure your skillet is clean and then melt the remaining butter. Place one slice of sourdough in the skillet and top it with

Grill the Sandwich: Close the sandwich and then butter the second slice of sourdough with butter on the outside. Grill the sandwich in the skillet over medium heat until the bread is golden brown and the cheese is melted. Flip carefully and repeat on the other side.
TOP TIP - PRESS DOWN FOR EVEN COOKING: Use a spatula or heavy lid from a pot to press down lightly on the sandwich while it’s grilling. This helps everything melt together and ensures even browning.

Notes
