FRENCH ONION PASTA (WITH CHILI AND CREAM!)

Description

French onion pasta (with chili and cream!) Make it once, and you’ll be hooked. Whether you're trying to impress your date or want to whip up something cozy with pantry basics, this pasta with caramelized onions brings the heat, the cream, and the crave. Serve it solo or glam it up with steak, chicken, or even buttery shrimp.

 


Ingredients

Scale

1/2 packet of spaghetti or fettuccine

2 tablespoons of olive oil

3 large onions, thinly sliced

4-5 garlic cloves, crushed

1/4 teaspoon chili flakes (add more if you like danger!)

1/2 cup cream

1 handful of fresh or frozen spinach (optional)

salt and pepper to taste

1/4 cup Parmesan cheese


Instructions

1. Caramelize the onions and garlic
In a large skillet, heat olive oil over low to medium heat. Add your sliced onions and a pinch of salt. Add the garlic. Let them cook down slow and low for 20–25 minutes, stirring occasionally. You’re looking for golden, jammy onions — not fried, not burned, but perfectly soft and sweet. Top tip: cover the pan with a lid to help the onions cook.

2. Add the chili
Toss in the crushed chili flakes. Sauté for another 2–3 minutes.

3. Add the cream and spinach
Pour in the heavy cream and stir through. Let it simmer gently for 3–4 minutes so it thickens slightly. Add the spinach and let it wilt down (or heat through if frozen).

4. Toss with pasta
Drain your cooked spaghetti (or fettuccine!) and toss it into the pan with the sauce. Mix until every strand is luxuriously coated. If needed, add a splash of pasta water to loosen things up.

5. Serve
Top with cracked black pepper, chili flakes, or a handful of grated Parmesan if you fancy. Optional (but highly recommended): serve with grilled steak, chicken, or juicy shrimp on the side.

Notes

Level it up: Add a splash of white wine when cooking the onions, just before adding the cream for extra depth.

Chili control: Not a fan of heat? Use sweet paprika instead of chili flakes for warm flavor without the fire.
