Description
Semolina dessert (with honey + cream!) doubles as breakfast and dessert. Top with berries and nuts. Itβs smooth, sweet, and ready in under 10 minutes. It's the best pudding to warm you up on a cold day!
Ingredients
2 cups milk (500 ml)
1/2 cup semolina (60 g)
3 tablespoons sugar (swap for honey, maple syrup, pureed dates, or whatever sweetener you fancy!)
1/2 tablespoon vanilla extract
1/8 teaspoon cinnamon
To serve: Runny honey, pouring cream, and chopped pistachios (or even a blob of butter! π)
Instructions
Heat the milk:
In a saucepan, warm the milk over medium heat until it just begins to steam.
Add the semolina:
Slowly pour in the semolina while whisking constantly to prevent lumps. Keep whisking until the mixture starts to thicken β about 3β5 minutes.
Sweeten it up:
Stir in the sugar, vanilla extract, and cinnamon. Cover with a lid and let the pudding rest for 5 minutes.
Serve:
Spoon into small bowls while warm. Drizzle generously with honey, pour over some cream, and sprinkle a few pistachios or fresh berries.
Notes
Feeling fancy? Layer it with roasted nuts and a drizzle of honey syrup for a Lebanese-style semolina cake taste.
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently with a splash of milk or cream to loosen.
