In a saucepan, warm the milk over medium heat until it just begins to steam.
Add the semolina:
Slowly pour in the semolina while whisking constantly to prevent lumps. Keep whisking until the mixture starts to thicken — about 3–5 minutes.
Sweeten it up:
Stir in the sugar, vanilla extract, and cinnamon. Cover with a lid and let the pudding rest for 5 minutes.
Serve:
Spoon into small bowls while warm. Drizzle generously with honey, pour over some cream, and sprinkle a few pistachios or fresh berries.
