Description

This strawberry chia pudding with yogurt is creamy, fruity, and topped with a delicious layer of chocolate that cracks when you dig your spoon in. Made with fresh strawberries, Greek yogurt, chia seeds, honey, and chocolate, it's an easy make-ahead breakfast, snack, or healthy-ish dessert.


Ingredients

150 g strawberries

2 teaspoons honey or sweetener of choice

3 tablespoons chia seeds

250 g Greek yogurt

50 g chocolate


Instructions

1. Mash the strawberries

Place the strawberries in a bowl and mash them well with a fork. You can leave a few small strawberry pieces for extra texture.

2. Add the yogurt and chia seeds

Add the Greek yogurt, chia seeds, and honey, if using, to the mashed strawberries.

Stir everything together until the chia seeds are evenly distributed throughout the yogurt mixture.

3. Add the chocolate topping

Transfer the strawberry chia pudding to a small bowl, jar, or serving glass.

Melt the chocolate until smooth, then pour it over the top of the pudding and gently spread it into an even layer.

4. Refrigerate

Place the pudding in the refrigerator and chill until the chia pudding has thickened and the chocolate topping has completely set.

When you're ready to eat it, crack through that chocolate layer with a spoon and enjoy!

 

Notes

Use ripe strawberries. Because strawberries are the main flavor in this recipe, sweet and juicy berries make a big difference.

Adjust the sweetness. Taste the strawberry and yogurt mixture before adding the chocolate. Add the honey if you prefer it sweeter.

Stir the chia seeds thoroughly. Make sure there aren't any clumps of chia seeds hiding at the bottom of the bowl.

Give it time to set. The chia seeds need time to absorb moisture and thicken the pudding, so don't rush the chilling time.
