OLIVE OIL: For frying

GARLIC: Minced

GINGER: Freshly grated or from a jar.

SMOKED PAPRIKA: This adds SO much smokey flavor.

DRIED CHILLI FLAKES: or fresh chilli finely chopped (seeds removed)

TOMATO PUREE: This adds a beautiful richness to the dish.

CANNED TOMATOES OR FOUR FRESH TOMATOES

THYME: Experiment with different herbs based on your taste preferences. Fresh basil, oregano, or parsley can complement the dish.

🍅 FRESH TOMATOES VS CANNED TOMATOES?

While canned tomatoes are convenient, using fresh tomatoes during their peak season can elevate the freshness of your dish.

  • 2 teaspoons olive oil
  • 1 onion, chopped
  • 1 clove garlic, minced. (or one teaspoon of crushed garlic from a jar)
  • 1 teaspoon ginger, crushed/grated
  • 1 teaspoon smoked paprika
  • ¼ teaspoon dried chilli flakes
  • 3 teaspoons tomato paste
  • 1 can (400 g) chopped tomatoes
  • ½ teaspoon thyme
  • salt and pepper to taste
