Saucisse rougaille is made with sausages cooked in a rich, flavorful tomato-based sauce with a blend of aromatic spices. Only using one pot, this easy recipe makes the perfect midweek meal. Ingredients
- 4 sausages (vegetarian), chopped into rounds (Or regular sausages such as good quality pork sausages if not vegetarian/vegan.)
- 2 teaspoons olive oil
- 1 onion, chopped
- 1 clove garlic, minced. (or one teaspoon of crushed garlic from a jar)
- 1 teaspoon ginger, crushed/grated
- 1 teaspoon smoked paprika
- 1/4 teaspoon dried chilli flakes
- 3 teaspoons tomato paste
- 1 can (400 g) chopped tomatoes
- 1/2 teaspoon thyme
- salt and pepper to taste
Instructions
- Sautéing the Vegetarian Sausages: Heat a pan with olive oil over medium heat. Add the sliced vegetarian sausages, allowing them to brown on all sides. Once beautifully golden, remove the sausages from the pan and set them aside.
- Building Flavor with Aromatics: Add a bit more olive oil in the same pan if needed. Toss in the chopped onion, minced garlic, grated ginger, smoked paprika, and dried chili flakes, and season with salt and pepper. Cook this aromatic mix until the onions turn golden and succulent.
- Infusing the Tomato Base: Stir in the tomato puree, followed by canned or fresh tomatoes. Add a sprinkle of thyme to enhance the flavor. Let the mixture simmer for 10-15 minutes, letting the ingredients meld together and the flavors intensify.
- A Note for Meat Sausages: If you're using beef or pork sausages, remember to add them when introducing the tomatoes to ensure thorough cooking of the meat.
- Bringing it All Together: Once the tomato base has achieved a rich consistency, gently reintroduce the vegetarian sausages to the pan. Cook on low heat for an additional 5 minutes, allowing the sausages to absorb the flavors and become warm. Serve and enjoy.

Simmering Time: Let the tomato base simmer for 10 - 15 minutes to meld the flavor. Longer simmering time can deepen the richness of the sauce.
