This hot gluten free spinach dip melts in your mouth. It's quick and easy to make. The perfect gluten-free meal, snack, or finger food for a party. Soft in the middle, while the blend of cheeses creates a gooey topping that's golden and bubbly. Serve with sliced veggies or gluten free crackers.
Ingredients
10 ounces fresh spinach leaves (283 g bag / about 10 cups)
8-ounce block of cream cheese softened (226 g )
1/2 cup sour cream
1/2 cup mayonnaise
1 teaspoon minced garlic or dried garlic
1/2 cup grated cheddar cheese (or parmesan cheese)
1 1/2 cups shredded mozzarella cheese (reserve 1/2 cup for the topping)
1/2 teaspoon salt
1/4 teaspoon pepper
cooking spray
1 tablespoon green onions for garnish
Instructions
- Sautee Spinach: Start by sauteeing the fresh spinach leaves in a pan until cooked through. Once tender, drain the excess liquid well to ensure our dip maintains the perfect consistency.
- Creamy Cheese Blend: Combine softened cream cheese with sour cream, mayonnaise, garlic, cheddar, and mozzarella cheese in a mixing bowl. Season with salt and pepper. Mix until smooth and creamy, creating a base for our dip.
- Spinach: Add the sauteed spinach to the cream cheese mixture, blending until well incorporated.
- Bake: Preheat your oven to 375 F (190 C) and prepare a baking dish with cooking spray. Spread the spinach and cream cheese mixture evenly in the dish, then sprinkle the reserved cheese on top.
- Into the Oven: Bake the dip until golden and bubbly, about 20 minutes. You can broil for 1-2 minutes if you want an extra golden top. Once beautifully golden, remove from the oven and let it cool slightly before serving.
- Sprinkle over chopped green onions for garnish.

Properly Drain the Spinach: After sauteing the spinach, make sure to drain it well to remove any excess moisture. This helps prevent the dish from becoming too watery.
