HOT GLUTEN FREE SPINACH DIP

Description

This hot gluten free spinach dip melts in your mouth. It's quick and easy to make. The perfect gluten-free meal, snack, or finger food for a party. Soft in the middle, while the blend of cheeses creates a gooey topping that's golden and bubbly. Serve with sliced veggies or gluten free crackers.


Ingredients

10 ounces fresh spinach leaves (283 g bag / about 10 cups)

8-ounce block of cream cheese softened (226 g )

1/2 cup sour cream

1/2 cup mayonnaise

1 teaspoon minced garlic or dried garlic

1/2 cup grated cheddar cheese (or parmesan cheese)

1 1/2 cups shredded mozzarella cheese (reserve 1/2 cup for the topping)

1/2 teaspoon salt

1/4 teaspoon pepper

cooking spray

1 tablespoon green onions for garnish


Instructions

  1. Sautee Spinach: Start by sauteeing the fresh spinach leaves in a pan until cooked through. Once tender, drain the excess liquid well to ensure our dip maintains the perfect consistency.
  2. Creamy Cheese Blend: Combine softened cream cheese with sour cream, mayonnaise, garlic, cheddar, and mozzarella cheese in a mixing bowl. Season with salt and pepper. Mix until smooth and creamy, creating a base for our dip.
  3. Spinach: Add the sauteed spinach to the cream cheese mixture, blending until well incorporated.
  4. Bake: Preheat your oven to 375 F (190 C) and prepare a baking dish with cooking spray. Spread the spinach and cream cheese mixture evenly in the dish, then sprinkle the reserved cheese on top.
  5. Into the Oven: Bake the dip until golden and bubbly, about 20 minutes. You can broil for 1-2 minutes if you want an extra golden top. Once beautifully golden, remove from the oven and let it cool slightly before serving.
  6. Sprinkle over chopped green onions for garnish. 
  7. Enjoy!

Notes

Properly Drain the Spinach: After sauteing the spinach, make sure to drain it well to remove any excess moisture. This helps prevent the dish from becoming too watery. 

Room Temperature Ingredients: To ensure a smooth and creamy texture, allow your cream cheese to come to room temperature before mixing it with other ingredients. This makes it easier to blend and results in a smoother dip. 

Adjust Seasoning: Taste the dip before baking and adjust the seasoning accordingly. You can add more salt, pepper, or garlic to suit your preference. 

Serve with Dippers: Consider serving the dip with an assortment of dippers such as gluten-free crackers, fresh vegetables, or tortilla chips.
