Description

Easy nori sushi wraps (without fish) can be made with your choice of fillings. We have used rice, crunchy cucumber, vibrant capsicum, and creamy chickpeas mixed with mayo to make these easy seaweed wraps. Whether you're packing them for a picnic, serving them at a gathering, or simply enjoying them as a quick and healthy meal at home, these high-protein, healthy homemade sushi wraps will become a favorite.

Ingredients

Nori Seaweed

Cooked Sushi Rice (or regular rice)

Vegetables of choice (lettuce, cucumber, capsicum, or avocado are great!)

Protein of choice (I've used 1 can of drained chickpeas with 3 tablespoons of mayonnaise and a squirt of lemon)

Instructions

Prepare the Nori Sheet: Using a pair of clean kitchen scissors, carefully slice the Nori sheet in the middle to the halfway point.

Assemble the Ingredients: In each of the four resulting squares, place a portion of each ingredient in the following order: rice, cucumber slices, sliced capsicum, and chickpeas mixed with Japanese mayo.

Fold to Form a Square: Take one corner of each nori square and fold it diagonally across the ingredients to meet the opposite corner, forming a triangle. Then, fold the remaining two corners in the same manner, overlapping them slightly to seal the wrap and create a square shape.

Press Gently: Press down gently on the edges to secure the folds and ensure the wrap holds together.

Repeat and Serve: Repeat the process for each nori square until all the ingredients are used. Arrange the completed sushi wraps on a serving platter and enjoy immediately, or refrigerate until ready to serve.

Dipping Sauces: For added flavor, serve the sushi wraps with your favorite dipping sauces, such as soy sauce, tamari, or sweet chili sauce.

Notes

Prevent Soggyness: Using rice helps everything stick together and prevents the wrap from becoming soggy.
