Ingredients
Nori Seaweed
Cooked Sushi Rice (or regular rice)
Vegetables of choice (lettuce, cucumber, capsicum, or avocado are great!)
Protein of choice (I've used 1 can of drained chickpeas with 3 tablespoons of mayonnaise and a squirt of lemon)
Instructions
Prepare the Nori Sheet: Using a pair of clean kitchen scissors, carefully slice the Nori sheet in the middle to the halfway point.
Assemble the Ingredients: In each of the four resulting squares, place a portion of each ingredient in the following order: rice, cucumber slices, sliced capsicum, and chickpeas mixed with Japanese mayo.
Fold to Form a Square: Take one corner of each nori square and fold it diagonally across the ingredients to meet the opposite corner, forming a triangle. Then, fold the remaining two corners in the same manner, overlapping them slightly to seal the wrap and create a square shape.
Press Gently: Press down gently on the edges to secure the folds and ensure the wrap holds together.
Repeat and Serve: Repeat the process for each nori square until all the ingredients are used. Arrange the completed sushi wraps on a serving platter and enjoy immediately, or refrigerate until ready to serve.
Dipping Sauces: For added flavor, serve the sushi wraps with your favorite dipping sauces, such as soy sauce, tamari, or sweet chili sauce.
Notes
Prevent Soggyness: Using rice helps everything stick together and prevents the wrap from becoming soggy.
