COOKED SUSHI RICE: leftover sushi rice is excellent for this recipe. You can also use regular rice. Cooked quinoa works great if you would like to make it without rice.
VEGETABLES OF CHOICE: cucumber, lettuce (cheaper choice), avocado, and capsicum work great.
PROTEIN: I'm swapping tuna for smashed chickpeas mixed with Japanese Mayo (or regular mayonnaise). You can use your favorite protein option.
SERVE WITH (OPTIONAL): Soy sauce and pickled ginger and wasabi.
Seasoning Suggestions:

How to make sushi wraps

Prepare the Nori Sheet: Using a pair of clean kitchen scissors, carefully slice the Nori sheet in the middle to the halfway point.
Assemble the Ingredients: In each of the four resulting squares, place a portion of each ingredient in the following order: lettuce, cucumber slices, sliced capsicum, and chickpeas mixed with Japanese mayo and rice.
Fold to Form a Square: Take one corner of each nori square and fold it diagonally across the ingredients to meet the opposite corner, forming a triangle. Then, fold the remaining two corners in the same manner, overlapping them slightly to seal the wrap and create a square shape.
Press Gently: Press down gently on the edges to secure the folds and ensure the wrap holds together.
Repeat and Serve: Repeat the process for each nori square until all the ingredients are used. Arrange the completed sushi wraps on a serving platter and enjoy immediately, or refrigerate until ready to serve.
