Description

This easy quiche courgette is a cheesy, veggie-packed quiche that's perfect warm or cold — a no-fuss, no-crust, no-cream winner! This recipe was passed down to me by an elderly friend, so yes, it's tried and tested (and now, you're about to become obsessed too)—the perfect fuss-free dinner or lunch.


Ingredients

2 large grated courgettes, about 2 cups/350 g (also known as Zucchini)

3 eggs

1 cup grated cheese ( I use cheddar but you can use your favorite)

1/4 cup feta cheese (optional but highly recommended)

1 1/2 cups milk (I use full cream / whole milk)

1/2 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1/4 teaspoon ground black pepper


Instructions

Preheat your oven to 180°C (350°F). Grease a pie dish or quiche pan.

In a large bowl, whisk together the eggs, milk, and flour. Season with salt and pepper.

Stir in the grated courgettes and most of the grated cheese (leave a little for the topping). If you're going with extras like fried bacon or mushrooms, now's the time to throw them in! Add the feta cheese and combine. Sprinkle the remaining cheese on the top.

Pour the mixture into your greased dish and bake for 30 minutes or until it’s golden and the center is set.

Let it rest: After baking, allow the quiche to cool for about 10 minutes. This helps it set and makes it easier to slice cleanly.

Slice it up, and enjoy! Whether you want to eat it warm or cold, this quiche is a star no matter what. ⭐️

Notes

This crustless courgette quiche is the perfect make-ahead dish for busy days! You can easily prepare it a day or two in advance. Simply follow the recipe and bake as usual. Once it's cooled, cover it tightly with plastic wrap or foil and pop it in the fridge. If you're super organized, you can even prep the ingredients (grate the courgettes, whisk the eggs and milk) the night before, and just assemble and bake the next day for freshly baked quiche.
