This easy quiche courgette (vegetarian) is a cheesy, veggie-packed quiche that's perfect warm or cold — it's a no-fuss, no-cream, self-crusting quiche winner! This recipe was passed down to me by an elderly friend, so yes, it's tried and tested (and now, you're about to become obsessed too)—the perfect fuss-free dinner or lunch.

COURGETTE QUICHE
This crustless zucchini quiche is all about keeping things simple, healthy, and delicious. It is seriously a no-fail, crowd-pleaser.
It’s the kind of recipe that, once you try, you'll keep coming back to. I like to serve this quiche with a cashew nut and citrus salad or chickpea salad and garlic bread on the side. A simple but totally delicious meal.
Plus, the fact that it’s passed down from a friend makes it even more special — so trust me when I say this one’s a keeper!
It's the perfect vegetarian zucchini slice for using up seasonal vegetables like courgettes, but you can always mix in whatever’s in your fridge (hello, leftover ham- or grilled tofu).

COURGETTES: Also known as zucchinis. But don't stop at courgettes, you can get creative and add your favorite veggies like cherry tomatoes, onions, spring onions, and mushrooms. Your favorite herbs such as thyme or basil. You can even add a little fried bacon or ham if you’re not vegan and you are feeling a little extra fancy.
EGGS: Fresh large eggs.
GRATED CHEESE: Cheddar cheese is my favorite
FETA CHEESE: Optional but tightly recommended
MILK: Full cream / whole milk is best
SELF-RAISING FLOUR: (Or use all-purpose flour and add ½ teaspoon + ¼ teaspoon of baking powder)
SALT AND PEPPER: To taste
👩🏼🍳 HOW TO MAKE QUICHE COURGETTE

In a large bowl, whisk together the eggs, milk, and flour. Season with salt and pepper.
Stir in the grated courgettes and most of the grated cheese (leave a little for the topping). If you're going with extras like fried bacon or mushrooms, now's the time to throw them in! Add the feta cheese and combine. Sprinkle the remaining cheese on the top.

📝 TIPS AND TRICKS
Go non-stick: Grease your baking dish well, or use a non-stick quiche pan to make sure you don’t lose any of that cheesy, golden crust.
Let it rest: After baking, allow the quiche to cool for about 10 minutes. This helps it set and makes it easier to slice cleanly.
Leftovers are gold: This quiche is just as delicious the next day. Keep it in the fridge and enjoy it cold, or reheat it in the oven at a low temperature to bring it back to life.
Serve warm or cold: It’s just as delicious either way, making it the ultimate make-ahead dish for brunches, lunches, or even a light dinner.
MAKE-AHEAD, STORAGE AND REHEATING
MAKE-AHEAD
This crustless courgette quiche is the perfect make-ahead dish for busy days! You can easily prepare it a day or two in advance. Simply follow the recipe and bake as usual. Once it's cooled, cover it tightly with plastic wrap or foil and pop it in the fridge.
If you're super organized, you can even prep the ingredients (grate the courgettes, whisk the eggs and milk) the night before, and just assemble and bake the next day for freshly baked quiche.
STORAGE
Fridge: Once baked, let the quiche cool completely, then cover it tightly and store in the fridge. It'll keep fresh for up to 3 days.
Freezer: Yes, you can freeze this beauty! Bake the quiche, let it cool fully, then wrap it in a couple of layers of plastic wrap and pop it into a freezer-safe bag or container. It will last for up to 2 months. When you're ready to enjoy it, thaw it overnight in the fridge.
REHEATING
In the Oven: For that freshly baked feel, reheat your quiche in the oven at 180°C (350°F) for about 10-15 minutes. Cover it loosely with foil to prevent the top from over-browning.
Microwave: In a rush? You can microwave individual slices for 1-2 minutes.
Cold Quiche is Life: Don’t underestimate how great this quiche tastes cold. It’s perfect straight from the fridge for a quick lunch or picnic snack.
