Chocolate covered pineapple (vegan!) Pineapple on its own? Great. Pineapple dipped in chocolate? Mind-blowingly good. Bonus points: it's so easy to make, with only 3 ingredients needed and it's gluten-free!
Ingredients
1 pineapple, peeled and cored
1 cup of chocolate chips (vegan, of course!)
1-2 teaspoons coconut oil
Sprinkles
Instructions
Prep your pineapple: Cut your peeled and cored pineapple into rings or chunks—whatever size makes you feel fancy.
Melt the chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between until it’s silky smooth. You want that good drizzle-y consistency.
Dip Time Or Spread the Chocolate: Now for the fun part. Dip each piece of pineapple into the melted chocolate. Then place the chocolate-coated pineapple on a baking sheet lined with parchment paper. For an easier method, use a spoon to spread the chocolate over the pineapple.
Sprinkles: Add sprinkles to your chocolate-dipped pineapple before the chocolate sets.
Chill: Pop your tray into the fridge for about 15-20 minutes or, if you like it frozen, let them chill out in the freezer for up to an hour.
Notes
Spreading Might be Easier: Use a spoon to spread the chocolate over the piece of pineapple. I found it easier doing it this way.
Work quickly: Make sure to dip your pineapple pieces before the chocolate starts to harden.
Use pre-cut store-bought pineapple: Want to save time? Grab some pre-cut pineapple from the store—no peeling or coring necessary! Quick, easy, and just as delicious.
Refrigeration: Store your chocolate-covered pineapple in an airtight container in the fridge for up to 2-3 days. For the best taste and texture, enjoy them within the first 24 hours.
