🍫 PINEAPPLE CANDY TREAT
If you’re still out here eating pineapple plain, we need to talk.. chocolate-covered pineapple isn’t just a dessert—it’s basically candy.
I've dipped marshmallows in chocolate and rice krispie treats into chocolate but I've never tried dipping pineapple into melted chocolate until recently.
I was looking for a healthy treat for the school holidays (that included fruit). Normally I would make fruit muffins like Feijoa Muffins , Chocolate Covered Dates, or Protein Mousse, but today I had chocolate and pineapple to work with, and together, this recipe was a total game-changer. Perfect for the kids.
I customize it by adding sprinkles but you can add your favorite toppings like shredded coconut or nuts. Plus, it’s healthy enough that you can totally pretend you’re snacking responsibly. 😉

🥄 INGREDIENTS NEEDED AND SUBSTITUTIONS
PINEAPPLE:
I used a fresh pineapple. You need to peel and core the pineapple. There are more instructions on how to do this below. I would not recommend using canned pineapple. I don't think it will be sturdy enough when dipped into the melted chocolate. Store-bought, pre-sliced pineapple is fine (whatever’s easiest!)
CHOCOLATE CHIP (VEGAN, OF COURSE)
I used vegan milk chocolate for this recipe. You can use your favorite chocolate. Remember to melt it in a double boiler or in the microwave. Never add water to the melted chocolate. It will clump up and you won't be able to use it.
COCONUT OIL
I find this helps when melting the chocolate. It gives it a silky, smooth shin. You can also use olive oil. It does the same thing.
SPRINKLES
This adds a bit of fun and color to the chocolate-dipped pineapples. 🍭 You can add your favorite toppings. Get creative. I also love flakey sea salt!

🍍 HOW DO YOU CUT A PINEAPPLE INTO RINGS?
- Trim the top and bottom: Use a sharp chef’s knife to slice off about 1 inch from both the crown and base.
- Remove the skin: Stand the pineapple upright and slice down along the sides, cutting off the outer skin. Follow the curve of the fruit.
- Remove the eyes: If any “eyes” remain, cut them out with a small paring knife.
- Cut into slices: Lay the pineapple on its side and slice it into ½-inch thick rings.
- Core the rings: Use a small round cookie cutter or a paring knife to remove the tough core from the center of each slice.





👩🏼🍳 STEP-BY-STEP INSTRUCTIONS
Prep your pineapple: Cut your peeled pineapple into rings or chunks—whatever size makes you feel fancy.
Melt the chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between until it’s silky smooth. You want that good drizzle-y consistency.
Dip Time Or Spread the Chocolate: Now for the fun part. Dip each piece of pineapple into the melted chocolate. Then place the chocolate-coated pineapple on a baking sheet lined with parchment paper. For an easier method, use a spoon to spread the chocolate over the pineapple.
Sprinkles: Add sprinkles to your chocolate-dipped pineapple before the chocolate sets.
Chill: Pop your tray into the fridge for about 15-20 minutes or, if you like it frozen, let them chill out in the freezer for up to an hour.

🪄 TIPS AND TRICKS
Perfect for parties: Serve them as cute little dessert bites at your next get-together. Stick a toothpick in each piece, and you’ve got a low-effort, high-reward candy-like snack!
Use 2 forks when dipping: Hold the pineapple pieces in between two forks when dipping into the chocolate or use a spoon and spread it onto the pineapple.
Work quickly: Make sure to dip your pineapple pieces before the chocolate starts to harden. If using sprinkles, sprinkle straight way so that they stick onto the melted chocolate.
Use pre-cut store-bought pineapple: Want to save time? Grab some pre-cut pineapple from the store—no peeling or coring necessary! Quick, easy, and just as delicious.

❓FAQS
Fresh is best. I think canned pineapple pieces will be too soft and could break when handling them. If you decide to use canned pineapple, please let me know in the comments below if it worked.
Since pineapple is naturally gluten-free and vegan chocolate chips are as well, this treat is a great fit for most diets.

Make-Ahead: You can easily make chocolate-covered pineapple up to 1 day in advance. Just dip the pineapple, let the chocolate set, and store them in an airtight container in the fridge until you’re ready to serve.
Refrigeration: Store your chocolate-covered pineapple in an airtight container in the fridge for up to 2-3 days. For the best taste and texture, enjoy them within the first 24 hours.
Freezing: Want to save them for later? You can freeze chocolate-covered pineapple for up to 2 months. Place the dipped pieces on a parchment-lined baking sheet, freeze until solid, and then transfer them to a freezer-safe container. Eat them straight from the freezer for a delicious frozen treat!
Just be sure to check for any sogginess or discoloration before serving, especially if they’ve been stored for a few days!
