Description

These lemon balls (vegan) are the perfect treat to satisfy that candy craving. Made with ingredients like almond flour, coconut flour, and a burst of zesty lemon. Oh, and did we mention they’re no-bake? Yep, that’s right—just blend, shape, refrigerate, and enjoy!

Ingredients

Scale

1 cup almond flour (not almond meal)

3/4 cup coconut flour

3 tablespoons sugar of choice

1/2 teaspoon vanilla

2 tablespoons coconut oil

4 tablespoons lemon juice

1 tablespoon lemon zest

Icing sugar for dusting

Instructions

Blend: Add the almond flour, coconut flour, sugar, vanilla, coconut oil, lemon juice, and lemon zest to your high-speed blender or food processor.

Shape the Balls: Blend until everything is well combined. If the dough is too dry then add a bit more lemon juice. Then use your hands to roll the mixture into small balls (about 12). It’s a messy process, but it’s also a totally fun one.

Chill: Pop the balls in the fridge for 30 minutes so they can firm up. Trust me, the wait is totally worth it.

Dust and Serve: Once they’ve chilled, roll them in some icing sugar for a little extra sweetness and that signature “I just made fancy truffles” vibe.

Notes

Texture Check: If the mixture feels too wet, add a little extra coconut flour. If it’s too dry, a splash of more coconut oil or lemon juice should do the trick.

Customize the Sweetness: You can totally adjust the sweetness level by tweaking the sugar amount. Want to go totally sugar-free? Use stevia or monk fruit sweetener!

Roll ‘Em Up: You don’t need to be a perfectionist here. Just roll those little energy balls and go with the flow. Rustic is good—delicious is better.

A Fun Tip: Roll the lemon balls in extra coconut flakes or chopped nuts after they’ve chilled. It’s a great way to add some crunch and make them even more irresistible!
