Ingredients
1 cup almond flour (not almond meal)
3/4 cup coconut flour
3 tablespoons sugar of choice
1/2 teaspoon vanilla
2 tablespoons coconut oil
4 tablespoons lemon juice
1 tablespoon lemon zest
Icing sugar for dusting
Instructions
Blend: Add the almond flour, coconut flour, sugar, vanilla, coconut oil, lemon juice, and lemon zest to your high-speed blender or food processor.
Shape the Balls: Blend until everything is well combined. If the dough is too dry then add a bit more lemon juice. Then use your hands to roll the mixture into small balls (about 12). It’s a messy process, but it’s also a totally fun one.
Chill: Pop the balls in the fridge for 30 minutes so they can firm up. Trust me, the wait is totally worth it.
Dust and Serve: Once they’ve chilled, roll them in some icing sugar for a little extra sweetness and that signature “I just made fancy truffles” vibe.
