🍋 LEMON BLISS BALLS

I love recipes that contain lemons like my lemon protein bars or lemon lavender cookies. Lemon brings out so much flavor and zest and I love the little vitamin C.

Just like my energy balls, these Vegan Lemon Balls are perfect for make-ahead prepping, meaning you can whip up a batch and store them for later enjoyment.

Swap your usual candy for these zesty, vegan truffles. You won't regret it. 💫 🍋

❤️ WHY THIS RECIPE WORKS

No-Bake: Toss the ingredients into a high-speed blender, roll into balls, and voilà! No oven is required.

Super Energizing: With the natural fats from coconut oil and the protein-packed almond flour, these bliss balls keep you feeling fueled without crashing.

Zesty Lemon: The lemon juice and zest provide a refreshing burst of citrus.

🥄 INGREDIENTS NEEDED AND SUBSTITUTIONS

ALMOND FLOUR (NOT ALMOND MEAL):

Almond flour is the base for these lemon balls, offering a smooth texture and a mild, nutty flavor that pairs perfectly with the bright lemony notes.

COCONUT FLOUR:

Coconut flour absorbs moisture and helps bind the ingredients together while adding a light, slightly sweet flavor that complements the almond flour.

SUGAR:

You can use any sweetener that fits your needs, whether it’s coconut sugar, maple syrup, or stevia. It adds the perfect level of sweetness without overwhelming the lemon flavor.

VANILLA EXTRACT:

Vanilla adds a warm, aromatic base note that balances the tartness of the lemon and enhances the overall flavor.

COCONUT OIL:

Coconut oil helps create that soft, melt-in-your-mouth texture while contributing a subtle, tropical flavor that pairs wonderfully with the citrus.

LEMON JUICE + ZEST:

Lemon is the star of this recipe.

CONFECTIONERS SUGAR:

Also known as icing sugar/powdered sugar, it is used for dusting and makes them look as fancy as they taste.

Blend: Add the almond flour, coconut flour, sugar, vanilla, coconut oil, lemon juice, and lemon zest to your high-speed blender or food processor. If the dough is too dry then add a bit more lemon juice. Then use your hands to roll the mixture into small balls (about 12). It’s a messy process, but it’s also a totally fun one.

Chill: Pop the balls in the fridge for 30 minutes so they can firm up. Trust me, the wait is totally worth it.

Dust and Serve: Once they’ve chilled, roll them in some icing sugar for a little extra sweetness and that signature “I just made fancy truffles” vibe.

📝 TIPS AND TRICKS

Texture Check: If the mixture feels too wet, add a little extra coconut flour. If it’s too dry, a splash of more coconut oil or lemon juice should do the trick.

Customize the Sweetness: You can totally adjust the sweetness level by tweaking the sugar amount. Want to go totally sugar-free? Use stevia or monk fruit sweetener!

Roll ‘Em Up: You don’t need to be a perfectionist here. Just roll those little energy balls and go with the flow. Rustic is good—delicious is better.

A Fun Tip: Roll the lemon balls in extra coconut flakes or chopped nuts after they’ve chilled. It’s a great way to add some crunch and make them even more irresistible!

❓ FAQS

Can I make these lemon balls gluten-free?

Yes! These are naturally gluten-free thanks to the almond flour and coconut flour. They’re a perfect snack for anyone following a gluten-free diet.

How do I get the perfect shape for the lemon balls?

To make sure your truffles are all-even, use a small cookie scoop or spoon to portion the mixture, then roll them gently in your hands. Don’t worry about them being perfectly round—rustic is the vibe here!

Can I use a different oil instead of coconut oil?

Absolutely! If you're not a fan of coconut oil, you can use any neutral oil, like avocado oil or grapeseed oil. Coconut oil does add a bit of tropical flavor, but other oils will work just fine.

MAKE-AHEAD AND STORAGE

MAKE-AHEAD

  • Batch Prep: Since these no-bake lemon balls come together so quickly, you can easily double or triple the recipe to have a stash of treats ready for the week.
  • Chill for Maximum Flavor: After shaping the balls and refrigerating them for 30 minutes, they’ll be good to go. But they also get even better if you let them chill overnight—this gives the flavors a chance to meld and intensify.

STORAGE

  • Fridge: Store your lemon balls in an airtight container in the refrigerator for up to 1 week. The cold helps keep them firm and fresh while preserving that creamy, citrusy texture.
  • Freezer: Need to keep them around for longer? No problem! These little energy balls freeze like a dream. Simply place them in a single layer on a baking sheet to freeze them individually, then transfer them to an airtight container or freezer bag. They’ll stay good for up to 2 months. Just grab and thaw as needed!

Serving After Storing:

  • If you’ve kept them in the fridge, they’ll be ready to eat straight away.
  • From the freezer, let them sit at room temperature for about 10-15 minutes to soften up, or microwave them for 10-15 seconds for a quick treat.
