EASY VEGAN PROTEIN POWDER PANCAKES

Description

These easy vegan protein powder pancakes are made with simple ingredients (no banana needed) and are fluffy and soft. They're not only delicious but they also only contain 7 ingredients. They are dairy-free, egg-free, and perfect for a pre or post-workout snack.


Ingredients

Scale

250 g (1 cup) all-purpose flour

2 teaspoons baking powder

40 g (1/3 cup) vegan vanilla protein powder

2 tablespoons sugar

1 cup (250 ml) milk of choice

2 tablespoons apple cider vinegar

dairy-free butter for frying*

Topping ideas

maple syrup, dairy-free yogurt, fresh fruit and berries


Instructions

In a small bowl, whisk together the dry ingredients. 

Add the wet ingredient to a separate bowl and allow the liquid to sit for 5 minutes to curdle.

Combine the wet and dry ingredients and mix. Add additional milk if needed.

Allow the batter to rest for a few minutes before cooking. This helps the flour absorb the liquid and gives the baking powder time to activate, resulting in fluffier pancakes.

On medium to low heat, add butter to a frying pan. (Skip the butter if you are using a good quality non-stick pan.)

Pour 1/4 cup of the pancake batter into the pan to form pancakes. Tiny bubbles will appear, and once the bubbles stop popping and the edges go brown, flip the pancakes and allow to cook on the other side for a minute or two.  Repeat until all the batter is finished.

Enjoy warm with your choice of toppings. 

💫 Practice Makes Perfect: Don't get discouraged if your first pancake isn't perfect. Pancake making can be a bit of an art, and your first one is often a test to adjust heat and consistency.

Notes

Don't Overmix: Mix the batter until just combined. Overmixing can lead to tough pancakes. It's okay if there are a few lumps in the batter; they will disappear during cooking.

The Batter: Because of the protein powder, the batter will be quite thick.

Grease Lightly: Use a small amount of butter, oil, or non-stick cooking spray to grease the cooking surface lightly. Too much oil can make the pancakes heavy.

Pour Evenly: A small milk jug works best, or use a 1/4 cup when pouring the batter. This will help ensure that all your pancakes cook at the same rate and size.

Wait for Bubbles: Wait for small bubbles to appear on the surface of the pancakes before flipping them. This indicates that the bottom is cooked and ready to flip.

Cook on a Lower Heat: After flipping, reduce the heat slightly to ensure the inside cooks thoroughly without burning the outside.
