VEGAN PANCAKES RECIPE
As a mom to growing boys, I'm all about finding delicious ways to increase our protein intake.
With their active lifestyles, it’s essential to fuel them with nutritious meals like protein pudding, protein hot chocolate, or high-protein cottage cheese.
I love making a protein-packed vegan breakfast because you are ready to take on the day!
💪 PROTEIN POWDER OPTIONS
When it comes to whipping up a batch of delicious vegan protein pancakes, the type of protein powder you choose can significantly influence the texture and consistency of your batter.
Pancakes made from protein powders can differ in texture and taste depending on what protein powder you use. I prefer to use pea protein but you can use your favorite protein powder.
🌱 PLANT-BASED PROTEIN PANCAKES
Options like pea protein, rice protein, or blends can vary widely in texture. Generally, they create denser pancakes and can have a more grainy texture. Plant-based proteins can thicken the batter significantly. Depending on the brand of protein powder that you use, you might have to increase your liquid (plant-based milk or water) to maintain a pourable consistency.

🥄 INGREDIENTS NEEDED
All-Purpose Flour
Baking powder: This helps the pancakes to rise.
Protein powder: Use your favorite brand. I like pea protein powder.
Sugar: You can use brown, white, or coconut sugar.
Milk: Use your favorite type of milk. I love oat milk.
Apple cider vinegar: This is used to curdle the milk and assist leavening (rising). It also breaks down the gluten in the flour, which helps create thick and fluffy pancakes. You can use white vinegar or lemon juice.
Butter or oil: For frying
🍓 TOPPING IDEAS
- Maple syrup
- Butter
- Dairy-free Whipped cream
- Dairy-free yogurt
- Fresh berries and or sliced fruit

👩🏼🍳 STEP-BY-STEP INSTRUCTIONS
You can find the complete printable recipe below.
4. Allow the batter to rest for a few minutes before cooking. This helps the flour absorb the liquid and gives the baking powder time to activate, resulting in fluffier pancakes.
5. On medium to low heat, add butter to a frying pan. (Skip the butter if you are using a good quality non-stick pan.)
6. Pour ¼ cup of the pancake batter into the pan to form pancakes. Tiny bubbles will appear, and once the bubbles stop popping and the edges go brown, flip the pancakes and allow to cook on the other side for a minute or two. Repeat until all the batter is finished.
7. Enjoy warm with your choice of toppings.
📝 Tips and tricks
Choose the Right Protein Powder: Select a high-quality flavored protein powder that you enjoy the taste of. The flavor you choose will greatly influence the final taste of your pancakes.
Don't Overmix: Mix the batter until just combined. Overmixing can lead to tough pancakes. It's okay if there are a few lumps in the batter; they will disappear during cooking.
The Batter: Because of the protein powder, the batter will be quite thick.
Grease Lightly: Use a small amount of butter, oil, or non-stick cooking spray to grease the cooking surface lightly. Too much oil can make the pancakes heavy.
Pour Evenly: A small milk jug works best, or use a ¼ cup when pouring the batter. This will help ensure that all your pancakes cook at the same rate and size.
Wait for Bubbles: Wait for small bubbles to appear on the surface of the pancakes before flipping them. This indicates that the bottom is cooked and ready to flip
Cook on a Lower Heat: After flipping, reduce the heat slightly to ensure the inside cooks thoroughly without burning the outside.
Practice Makes Perfect: Don't get discouraged if your first pancake isn't perfect. Pancake making can be a bit of an art, and your first one is often a test to adjust heat and consistency.
❓ FAQS
Protein powder pancakes can be a nutritious option if you use high-quality protein powder and pair them with other wholesome ingredients. They can particularly benefit individuals with increased protein requirements or those looking to support muscle growth and recovery. However, like any food, moderation and balance are key and should be part of a well-rounded diet.
Depending on your protein powder, some powders will absorb more liquid than others, resulting in a thicker batter. This batter is quite thick but you can add a little more liquid if you think your batter needs to be thinner.
The secret to fluffy pancakes is buttermilk. To create vegan buttermilk I have added vinegar to plant-based milk. Buttermilk acts as a leavening agents and helps the pancakes to rise and be fluffy and tall.
