STRAWBERRY YOGURT BITES (WITH GRANOLA!)

Description

These strawberry yogurt bites (with granola!) are sweet, creamy, and crunchy (thanks to the added granola). They’re perfect for summer picnics, cozy movie nights, or as a refreshing post-workout snack. Plus, they’re so easy to whip up that even non-bakers will feel like dessert pros. They can easily be made vegan!


Ingredients

1 cup strawberries, diced

1/2 cup Greek yogurt

1 teaspoon vanilla extract

1 cup chocolate chips

2 teaspoons coconut oil

2 teaspoons Granola or your favorite cereal (optional)

flakey salt to garnish (optional)


Instructions

Step 1: Prep the strawberries
Dice the strawberries into bite-sized pieces. You’re aiming for chunks small enough to be snackable but big enough to still taste like, well, strawberries.

Step 2: Coat in yogurt
In a mixing bowl, combine the Greek yogurt and vanilla extract. Gently fold in the strawberries until they’re fully coated in the creamy yogurt. Add the granola and stir well.

Step 3: Freeze the bites
Line a baking sheet with parchment paper. Using a spoon, drop clusters of yogurt-covered strawberries onto the sheet. Pop the tray into the freezer for about 30 minutes or until the bites are firm.

Step 4: Dip in chocolate
While the yogurt bites are chilling, melt your chocolate chips with the coconut oil in the microwave (in 30-second intervals, stirring in between) or over a double boiler until smooth. Once the bites are frozen, dip each cluster into the melted chocolate to coat the bottom or drizzle chocolate over the top if you’re feeling artsy.

Step 5: Freeze again
Return the bites to the baking sheet and freeze for another 20 minutes to let the chocolate set. Now you’ve got a tray of perfectly chocolate-covered yogurt bites!

Notes

Use a non-stick surface: Parchment paper is your best friend to avoid messy clusters sticking to the tray.
