COTTAGE CHEESE PIZZA WITH GARLIC AND CHEESE

Description

This cottage cheese pizza (high protein low carbs!) is made from just three main ingredients (and a blender!), it is the perfect healthy dinner or snack containing about 24g of protein.


Ingredients

Scale

FOR THE PIZZA BASE:

250 g cottage cheese

2 eggs

a pinch of oregano

a pinch of salt

FOR THE GARLIC SAUCE:

2 teaspoons crushed garlic

2 teaspoons extra virgin olive oil

1/2 cup cheese of choice, grated.


Instructions

1. Preheat your oven to 350ºF/177ºC.

2. Line a quarter sheet pan with parchment paper and give it a spritz of cooking spray (no sticking allowed here).

 

Ingredients in a blender.

 

Blended cottage cheese mixture.

 

3. Blend the cottage cheese, eggs, a sprinkle of oregano, and salt until smooth. Similar to that of a pancake batter.

 

 

Smooth onto a prepared baking tray.

 

4. Pour the mixture onto your prepared pan and spread it out evenly. 

5. Bake for 20-25 minutes or until golden brown and firm to the touch.

 

Make the oil and garlic mixture.

6. Make the Garlic Oil
While your crust bakes, let’s infuse that extra virgin olive oil with garlic into a small bowl:

 

Brush with the oil mixture.

 

7. Assemble and Bake Again

8. Remove the baked crust from the oven. Brush it generously with your garlicky oil—get every nook and cranny!

9. Sprinkle on the shredded cheese and a little sprinkle of oregano (optional).

10. Pop it back into the oven for another 5 minutes, just until the cheese bubbles and browns to perfection. Broil or Grill setting works here. Remove and enjoy!

 

Sprinkle with cheese.

Notes

Shred your own cheese
Pre-shredded cheese is convenient, but those anti-caking agents stop the cheese from melting nicely. Shred it yourself; it’s worth it.

Customize the Toppings
Feeling extra? Add roasted veggies, cooked chicken, or even spicy jalapeños. Just a little as the pizza bases are thin.
