COTTAGE CHEESE PIZZA (HIGH PROTEIN LOW CARBS!)

This cottage cheese pizza (high protein low carbs!) is made from just three main ingredients (and a blender!) and is the perfect healthy dinner or snack containing about 24g of protein.

🍕 HIGH PROTEIN PIZZA CRUST

This healthy cheese pizza is your new best pizza base. The cottage cheese crust is protein-packed, and golden. It's a bit like an omelet and a bit like a quiche but in a pizza form. And with a garlicky, cheesy topping? Absolute heaven.

Affordable Protein Sources – Eggs and cottage cheese are relatively inexpensive yet packed with protein, making them a cost-effective alternative to pricey meats or specialty pizza dough ingredients.

Ridiculously easy: Blend, bake, top, and devour. No need for takeout when you can whip this up at home for a fraction of the price!

🥄 INGREDIENTS NEEDED AND SUBSTITUTIONS

FOR THE PIZZA BASE:

FULL-FAT COTTAGE CHEESE:

The star of the show! Cottage cheese provides the creamy base for this high-protein crust, offering structure, moisture, and a subtle tangy flavor. Its richness helps bind the crust without needing additional flour or fillers.

EGGS:

Eggs are the glue that holds the crust together, giving it a firm texture while keeping it light and slightly fluffy. They also contribute to the protein content.

A SPRINKLE OF DRIED OREGANO:

This classic herb for pizza.

A PINCH OF SALT:

Salt adds a little more flavor.

FOR THE TOPPING:

OLIVE OIL:

The olive oil is used to infuse the crust and toppings.

GARLIC:

Garlic brings a bold, aromatic flavor to the pizza. I like to use dried garlic but freshly crushed is perfect.

CHEESE OF CHOICE

Like grated cheddar cheese or mozzarella.

👩🏼‍🍳 STEP-BY-STEP INSTRUCTIONS

1. Preheat your oven to 350ºF/177ºC.

2 .Line a quarter sheet pan with parchment paper and give it a spritz of cooking spray (no sticking allowed here).

Ingredients in a blender.
COTTAGE CHEESE, EGGS AND HERBS.
Blended cottage cheese mixture.
BLENDED COTTAGE CHEESE.

3. Blend the cottage cheese, eggs, a sprinkle of oregano, and salt until smooth. Similar to pancake batter.

4. Pour the mixture onto your prepared pan and spread it out evenly.

Smooth onto a prepared baking tray.
SMOOTH ONTO A PREPARED BAKING TRAY.
Make the oil and garlic mixture.
OIL AND GARLIC MIXTURE.

5. Bake for 20-25 minutes or until golden brown and firm to the touch.

Step 2: Make the Garlic Oil
While your crust bakes, let’s infuse that extra virgin olive oil with garlic in a small bowl.

Brush with the oil mixture.
BRUSH WITH THE OIL MIXTURE.
Sprinkle with cheese.
SPRINKLE WITH CHEESE AND BAKE.

Step 3: Assemble and Bake Again

Remove the baked crust from the oven. Brush it generously with your garlicky oil—get every nook and cranny!

Sprinkle on the shredded cheese and a small sprinkle of oregano. Pop it back into the oven for another 5 minutes, just until the cheese bubbles and browns to perfection. Broil or grilled setting works here.

📝 TIPS AND TRICKS

Freshly grated cheese is best.
Pre-shredded is convenient, but those anti-caking agents stop the cheese from melting like a dream. Shred it yourself; it’s worth it.

Feeling extra? Add roasted veggies, cooked chicken, or even spicy jalapeños. Just a small amount as this pizza is delicate.

STORAGE:

Leftovers? Lucky you! Store any fully assembled pizza slices in an airtight container in the fridge for up to 3 days.

REHEATING:

To bring your pizza back to life, skip the microwave—it’ll make the crust soft. Instead:

Oven: Preheat to 350ºF/177ºC and bake slices on a baking sheet for 5-7 minutes, or until the cheese is bubbly.

Air Fryer: Set the air fryer to 350ºF and reheat for 2-3 minutes for a crispy crust and gooey cheese.

250 g cottage cheese

2 eggs

a pinch of oregano

a pinch of salt

FOR THE GARLIC SAUCE:

2 teaspoons crushed garlic

2 teaspoons extra virgin olive oil

½ cup cheese of choice, grated.


Instructions

1. Preheat your oven to 350ºF/177ºC.
