These healthy oat flour cookies (in 15 minutes!) are like your favorite muesli bar, but better! With endless add-in options like dried fruit, chocolate chips, or nuts, you can make them as sweet (or not) as you want. One bowl and six ingredients!
Ingredients
2 cups oat flour
1/2 teaspoon baking powder
3 tablespoons brown sugar
1/4 cup melted butter + 2 tablespoons
1 teaspoon vanilla extract
1 egg, beaten
ADD-IN IDEAS
1/2 cup nuts of choice, pumpkin seeds, dried cranberries, or chocolate chips.
Instructions
Preheat & Prep: Start by preheating your oven to 180°C (350°F) and line a baking tray with parchment paper.
Mix Up The Dry Ingredients: In a large bowl, whisk together the oat flour, baking powder, brown sugar, and add-ins (such as chocolate chips or nuts)
Mix Up The Wet Ingredients: In a separate bowl, combine the melted butter, vanilla extract, and beaten egg.
Combine & Stir: Pour the wet ingredients into the dry and mix until a soft oat flour cookie dough forms.
Shape the Dough: Scoop out spoonfuls of dough and roll them into balls. Place them on the prepared baking tray, flattening them slightly with your palm or a fork. Tip: gently hold the edges of each cookie while you flatten them. This helps to keep the shape.
Bake: Pop them into the oven and bake for 10 minutes. They’ll emerge soft and golden, with just the right amount of chew.
Cool: Let them cool on the tray for a few minutes before transferring to a wire rack. Trust us, the wait is worth it!
