EASY OAT FLOUR COOKIES

They’re quick, easy, and made with ingredients you probably already have!

They’re not overly sweet—just sweet enough to satisfy your cravings without feeling like dessert overload.

These cookies have a subtle earthy flavor from the oats; all you have to do is add your favorite add-ins.

I used dried cranberries, almonds, and sunflower seeds. You can use chocolate chips if you like.

You can easily make these gluten-free and dairy-free.

🥄 INGREDIENTS NEEDED AND SUBSTITUTIONS

OATS:

To make oat flour, you can blend old-fashioned oats in a blender, or you can buy pre-made oat flour.

BROWN SUGAR:

Adds a slightly sweet flavor.

BAKING POWDER:

Baking powder helps the cookies rise.

BUTTER:

Use unsalted butter.

EGG:

Binds the cookies together.

VANILLA EXTRACT:

Adds a little flavor.

YOUR CHOICE OF ADD-INS:

You can make them oat flour chocolate chip cookies or add seeds, nuts, or dried cranberries.

👩🏼‍🍳 STEP-BY-STEP INSTRUCTIONS

Preheat & Prep: Start by preheating your oven to 180°C (350°F) and line a baking tray with parchment paper.

Mix Up The Dry Ingredients: In a large bowl, whisk together the oat flour, baking powder, brown sugar, and add-ins (such as chocolate chips or nuts).

Add the dry ingredients.
ADD THE DRY INGREDIENTS.

Mix the wet ingredients.
MIX THE WET INGREDIENTS,
Add the wet mixture to the oats.
ADD THE WET MIXTURE TO THE OATS.

Stir In The Wet Ingredients: In a separate bowl, combine the melted butter, vanilla extract, and beaten egg.

Combine & Stir: Pour the wet ingredients into the dry and mix until a soft oat flour cookie dough forms.

Shape the Dough: Scoop out spoonfuls of dough and roll them into balls. Place them on the prepared baking tray, flattening them slightly with your palm.

Roll into balls.
ROLL INTO BALLS.
Bake.
BAKE.

Bake: Pop them into the oven and bake for 10 minutes. They’ll emerge soft and golden, with just the right amount of chew.

Cool: Let them cool on the tray for a few minutes before transferring to a wire rack. Trust us, the wait is worth it!

Use Certified Gluten-Free Oat Flour: If gluten-free is a priority, ensure your oat flour is certified to avoid cross-contamination.

Don’t Overmix: Overworking the dough can make your cookies dense instead of tender.

MAKE-AHEAD AND STORAGE

MAKE-AHEAD:

You can prepare the cookie dough ahead of time and store it in the refrigerator for up to 2 days. Simply scoop and bake when ready.

STORAGE:

Store baked cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze them for up to 3 months. Let them thaw at room temperature before enjoying them!
