Preheat & Prep: Start by preheating your oven to 180°C (350°F) and line a baking tray with parchment paper.
Mix Up The Dry Ingredients: In a large bowl, whisk together the oat flour, baking powder, brown sugar, and add-ins (such as chocolate chips or nuts).




Stir In The Wet Ingredients: In a separate bowl, combine the melted butter, vanilla extract, and beaten egg.
Combine & Stir: Pour the wet ingredients into the dry and mix until a soft oat flour cookie dough forms.
Shape the Dough: Scoop out spoonfuls of dough and roll them into balls. Place them on the prepared baking tray, flattening them slightly with your palm.


Bake: Pop them into the oven and bake for 10 minutes. They’ll emerge soft and golden, with just the right amount of chew.
