Description

Bang Bang Chicken Skewers (so easy!) are juicy chunks of chicken coated in smoky spices, oven-baked, then drenched in a creamy, spicy, sweet, and tangy sauce. Serve with rice or salad and extra bang bang sauce on the side. These skewers can be grilled or cooked in your air fryer.

 


Ingredients

FOR THE BANG BANG SAUCE

1/2 cup (120g) mayonnaise

1 teaspoon Thai sweet chili sauce

1-2 teaspoons (6-12g) sriracha

2 teaspoons (14g) honey

FOR THE CHICKEN SKEWERS

6 wooden skewers (soak the skewers in water for a minimum of 20 minutes before using)

1 1/2 to 2 lbs chicken breast or thighs, cut into bite-sized cubes

2-3 tablespoons olive oil

1/2 teaspoon salt

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

2 tablespoons lime juice


Instructions

1. Make the Bang Bang Sauce

In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and honey. Taste and adjust the sriracha if you like it extra spicy.
Divide the sauce in half—one half is for brushing before baking, the other for drizzling before serving.

2. Marinate the Chicken

In a large bowl, toss the chicken pieces with olive oil, lime juice, salt, smoked paprika, and garlic powder. Let it sit for 15 - 20 minutes while you soak your wooden skewers in water.

3. Skewer the Chicken

Thread the chicken cubes tightly onto skewers. Brush them generously with half the bang bang sauce.

4. Bake (or Grill)

Place skewers on a lined baking tray or wire rack.
Bake at 220°C (425°F) for 18–20 minutes, flipping once halfway through.
Optional: Broil for an extra 2–3 minutes at the end to get those crispy golden edges!

5. Drizzle & Enjoy!

Once out of the oven, drizzle the remaining bang bang sauce over the hot skewers. Sprinkle with chopped herbs, sesame seeds, or chili flakes if you're feeling fancy. Serve immediately.

🌀 Air Fryer Instructions:

Preheat your air fryer to 200°C (390°F).

  1. Arrange the skewers in a single layer in the air fryer basket (you may need to work in batches). Don’t overcrowd the basket—leave a little space for air to circulate.
  2. Brush with half of the bang bang sauce before cooking, just like in the oven method.
  3. Air fry for 10–12 minutes, flipping once halfway through. Check that the chicken is cooked through and slightly crisp on the edges. Want extra crispy edges? Add 1–2 more minutes to the cook time at the end.
  4. The timings will depend on how thick the chicken pieces are; always check with a thermometer to be sure.
  5. Drizzle with the remaining sauce right before serving.

Notes

Use thighs for extra juicy skewers, but breasts work great too.

Double the sauce—you'll want extra for dipping everything.

Serve with: rice bowls, lettuce wraps, or even tacos for a fun twist.

Leftovers? Chop the chicken up and toss it into a salad or wrap for the next day.
