👩🏼🍳 How to make fudgy strawberry brownies from scratch
STEP 1: Preheat your oven to 350°F (175°C) and grease an 8-inch baking pan. Or line the pan with parchment paper.
STEP 2: In a saucepan, melt the butter, then add the oil to the hot butter. Whisk in the sugar until well combined (for about 1 minute).
STEP 3: Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract. Mix for another minute. The ingredients will lighten in color and become creamy in texture.
STEP 4: Sift in the flour, cocoa powder, and salt, and add the chocolate chips and strawberries. Gently fold the dry ingredients into the wet ingredients until just combined. Don't over-mix.
STEP 5: Pour the batter into the prepared baking pan and spread it out evenly.
STEP 6: Cut and slice the strawberries and place them over the top of the batter, pressing them in slightly.
STEP 7: Bake in the oven for 20-25 minutes or until the edges are set but the center is still slightly gooey. You can test this by inserting a toothpick. It is ready to remove if the toothpick comes out moist with a few crumbs. Do not overcook the brownies.
STEP 8: Allow the brownies to cool completely before cutting them into squares.
📝 TIPS AND TRICKS
Use High-Quality Chocolate: Choose high-quality dark chocolate for a rich and decadent flavor. The chocolate should have a cocoa content of at least 70% for the best results.
Remove from Oven Promptly: As soon as you notice that the edges of the brownies are set and a toothpick inserted into the center comes out with a few moist crumbs clinging to it (rather than wet batter), remove them from the oven immediately. Even if they seem slightly underdone, they will continue to cook slightly as they cool.
Choose Ripe Strawberries: For the best flavor, opt for ripe, juicy strawberries. Look for berries that are firm, plump, and brightly colored without any mushy spots.
Pat Dry the Strawberries: After washing the strawberries, make sure to pat them dry with a paper towel to remove excess moisture. This helps prevent the brownie batter from becoming too watery.
Dice the Strawberries Uniformly: Dice the strawberries into small, uniform pieces to ensure even distribution throughout the brownie batter.
Don’t Overmix the Batter: Be careful not to overmix the brownie batter once you add the dry ingredients. Overmixing can result in tough brownies instead of the desired tender texture.
Line the Pan with Parchment Paper: Line the baking pan with parchment paper, leaving some overhang on the sides. This makes it easier to lift the brownies out of the pan after baking, ensuring clean edges and easy slicing.
Allow the Brownies to Cool Completely: Let the brownies cool completely in the pan before slicing. This allows them to set properly and ensures that they hold together well when cut.
Help, I've overbaked my brownies! What do I do?
If you've accidentally overbaked your brownies, you were checking your emails, or were distracted by a phone call, don't worry; there are still ways to salvage them and ensure they're enjoyable:
Moisten with Simple Syrup: Prepare a simple syrup by combining equal parts sugar and water in a saucepan. Heat until the sugar is dissolved, then brush the syrup over the surface of the brownies while they're still warm. The syrup will add moisture to the brownies, helping to counteract any dryness from overbaking.
Create Brownie Truffles: Crumble the overbaked brownies and mix them with a bit of softened cream cheese or frosting to form a dough-like consistency. Roll the mixture into small balls, then coat them in cocoa powder, powdered sugar, or melted chocolate. These brownie truffles are a delicious way to repurpose overbaked brownies.
Store Properly: Once cooled, store the brownies in an airtight container at room temperature. This will help to retain their moisture and prevent them from drying out further.
Serve with Ice Cream or Sauce: If the brownies are slightly dry, you can serve them with a scoop of ice cream or a drizzle of chocolate sauce to add moisture and enhance the overall flavor and texture.
❓FAQS
Can you use frozen strawberries instead of fresh ones?
Yes, you can use frozen strawberries, but make sure to thaw them completely and pat them dry before using them. Frozen strawberries may release more moisture into the batter, so you might need to adjust the baking time accordingly—about 10-15 minutes longer.
Can I make these gluten-free?
Yes, you can make gluten-free by using a gluten-free flour blend in place of all-purpose flour. Ensure the blend includes a binder such as xanthan gum to help the brownies hold together.
What add-ins can I add?
Feel free to experiment with additional ingredients, such as chopped nuts, white chocolate chips, or a sprinkle of sea salt, for added flavor and texture.
Can I omit the chocolate and make strawberry blondies instead?
Absolutely! If you prefer strawberry blondies, you can omit the chocolate and focus on showcasing the flavor of the strawberries. Add a touch of vanilla extract or lemon zest.
How do I know when the brownies are done baking?
The brownies are done baking when a toothpick inserted into the center comes out with a few moist crumbs clinging to it, rather than wet batter. Be careful not to overbake, as this can result in dry brownies.
🫐 Can I add other fruit to the brownies?
Yes, you can experiment with other fruits, such as raspberries, blueberries, or cherries, in place of or in addition to the strawberries.
Make-ahead and Storage
Make-ahead:
Prepare the Batter Ahead: You can prepare the brownie batter ahead of time and store it covered in the refrigerator for up to 24 hours. When you're ready to bake, simply pour the batter into the prepared pan and add the diced strawberries before baking.
Bake and Store: Another option is to bake the brownies ahead of time and store them at room temperature in an airtight container for up to 2-3 days. Let them cool completely before storing to ensure they retain their freshness.
Storage:
Store the cooled brownies in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. If stored in the refrigerator, allow them to come to room temperature before serving for the best taste and texture.
Freezing:
Yes, you can freeze leftover brownies for up to 2-3 months. Wrap them tightly in plastic wrap or aluminum foil, or place them in an airtight container before freezing. Thaw the brownies in the refrigerator overnight before serving or microwave them briefly to warm them up.
