MINI WAFFLES (GREAT FOR KIDS!)

These mini waffles (great for kids!) are crispy on the outside and fluffy on the inside and are the ultimate breakfast (or snack!). They’re super easy to make. These waffles are egg-free, and you can leave out the sugar if you want to have healthy waffles for kids or toddlers.

💰 WHY THIS RECIPE IS BUDGET-FRIENDLY

🧈 Simple pantry ingredients – Waffles use everyday staples like flour, milk, and sugar — things you probably already have at home.

🧇 No fancy equipment needed – A basic mini waffle maker lasts for years and costs less than frequent café breakfasts.

🍓 Customizable toppings – You can top them with whatever’s affordable or on hand — butter, fruit, or syrup — no pricey extras required.

🥄 INGREDIENTS NEEDED

MILK:

You can swap regular milk for any plant-based milk, like almond or oat milk.

APPLE CIDER VINEGAR:

Lemon juice works perfectly, too.

ALL-PURPOSE FLOUR

SUGAR:

Brown, white, castor or even coconut sugar all work.

BAKING POWDER:

The secret to airy waffles — don’t skip it! Check the expiry date to make sure it's still good.

BUTTER:

Swap for coconut oil or margarine if you like.

VANILLA EXTRACT:

You can use almond extract for a fun twist.

👩🏼‍🍳 STEP-BY-STEP INSTRUCTIONS

Mix the milk and vinegar: In a small bowl, combine the milk and vinegar. Let it sit for about 5 minutes to create a "buttermilk." This will help make your waffles extra fluffy.

Dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Combine: Pour the "buttermilk" mixture into the dry ingredients. Add in the melted butter and vanilla extract. Stir everything together until just combined. Be careful not to overmix—you want your batter light and airy. (It's fine to have a few lumps)

Heat the waffle maker: Preheat your mini waffle maker or waffle iron. When it’s ready, lightly grease the plates if necessary.

Cook the waffles: Spoon the batter into the waffle maker and cook until golden brown and slightly crisp, about 3-4 minutes per waffle. Because they’re mini waffles, they’ll cook faster than traditional waffles, so keep an eye on them!

SHOULD YOU LET THE WAFFLE BATTER REST?

The vinegar and baking powder react right away, creating bubbles that make the batter light — so don’t let it rest too long,

SHOULD WAFFLE MIX BE THICK OR RUNNY?

The batter should be slightly thick but pourable — like pancake batter that slowly runs off a spoon, not watery or stiff.

Ingredients

1 ½ cups milk (360 ml)

2 teaspoons apple cider vinegar (10 ml) or lemon juice

2 cups all-purpose flour (240 g)

1 tablespoon baking powder (14 g)

½ teaspoon salt (2 g)

1 tablespoon sugar (12,5 g)

¼ cup melted butter (60 ml)

½ teaspoon vanilla extract (2 g)

Notes

Bulk cooking: These waffles freeze beautifully! Make a big batch, and freeze them. When you crave a waffle, simply pop it in the toaster or microwave for a quick breakfast or snack.

Waffles for toddlers: You can sneak in some nutrition by adding half a handful of finely grated veggies like carrots or zucchini into the batter. They won’t even notice!

Fluffy Waffles: Adding vinegar to the milk creates a buttermilk-like mixture that makes these waffles incredibly soft and fluffy.

Mini Appetizers: Serve these as mini bites by cutting them into wedges and topping them with whipped cream cheese, a fig, and a drizzle of maple syrup or honey.

Cooking: If there is steam coming out of the waffle iron, it means your waffle is still cooking.
