🍋 INGREDIENTS NEEDED
- 1 cup cashew nuts
- 1 ½ cups shredded coconut
- 3 tablespoons honey
- ½ cup fresh lemon juice
- 2 tablespoons lemon zest

1. Blend the base
Add the cashews to a food processor and blend until they form a fine crumb.
2. Add coconut
Add the shredded coconut and pulse to combine.
3. Add lemon + sweetness
Pour in the lemon juice, lemon zest, and honey. Blend until the mixture becomes sticky and holds together.
4. Roll into balls
Scoop out small portions and roll into bite-sized balls.
5. Coat in coconut
Roll each ball in extra shredded coconut for a beautiful finish.
6. Chill
Place in the fridge for 20–30 minutes to firm up.

Ingredients
1 cup of unsalted cashew nuts
1 ½ cups shredded coconut
3 tablespoons honey
¼ cup lemon juice
2 tablespoons lemon zest
⅓ cup shredded coconut (to coat the balls)
Instructions
Add the cashews to a food processor and blend until they form a fine crumb.
Add the shredded coconut and pulse to combine.
Pour in the lemon juice, lemon zest, and honey. Blend until the mixture becomes sticky and holds together.

Notes
