Minimal Ingredients – You only need four basic pantry staples (bananas, eggs, brown sugar, and rising flour), which keeps grocery costs super low.
No Oven Required – Using the air fryer saves on electricity compared to running a full oven for nearly an hour.
Uses Ripe Bananas – This recipe is the perfect way to use up bananas that might otherwise get tossed, reducing food waste and stretching your budget.

4 large bananas (nice and ripe!)
2 large eggs
½ cup brown sugar (tightly packed)
1 ½ cups self-raising flour (see notes below for making your own self-raising flour) 👇

Preheat your air fryer to 160°C (320°F).
Mash the bananas in a large bowl until smooth.
Whisk in the eggs and brown sugar until combined.


Fold in the self-raising flour gently (don’t overmix – we want fluffy, not dense).
Pour into a lined loaf pan that fits in your air fryer basket.


Air fry for 35 minutes, or until a toothpick comes out clean.
Cool in the tin for 15 minutes, then transfer to a wire rack to cool completely.

Use very ripe bananas, don’t overmix the batter, and let the bread cool completely before slicing – that keeps it soft and moist.
Overmixing the batter makes the banana bread dense and tough instead of light and fluffy.
STORAGE
- Room Temperature: Store your banana bread in an airtight container for up to 3 days.
- Fridge: For longer freshness, keep it in the fridge for up to 5 days.
- Freezer: Wrap slices individually and freeze for up to 3 months.
- Reheating: Warm slices in the microwave for 10–15 seconds or pop them in the air fryer for 1–2 minutes at 160°C (320°F) to bring back that fresh-baked taste.

4 large bananas (nice and ripe!)
2 large eggs
½ cup brown sugar (tightly packed)
1 ½ cups self-raising flour (to make your own self-raising flour, see the note above 👆🏼💡)
Instructions
Preheat your air fryer to 160°C (320°F).

💡 Check your air fryer early – Not all air fryers bake at the same speed. Start checking after 30 minutes, but don’t worry if yours needs longer. (Mine took about 50 minutes to bake fully.)

Go chocolatey – Stir in chocolate chips for a dessert-style banana bread.
