Dough

120 g self-raising flour (about 6 heaped tablespoons)

100 g Greek yogurt (about 4 tablespoons)

(If using plain/all-purpose flour, add ½ teaspoon baking powder.)

Filling

2 teaspoons butter

2 teaspoons sugar

1 teaspoon cinnamon

Optional: extra pinch of cinnamon

Cream Cheese Frosting

3 tablespoons icing sugar

¼ cup smooth cream cheese

Make the Dough

In a bowl, mix the self-raising flour and Greek yogurt until a dough forms.
The dough should be smooth and form a dough ball.

If the dough is too sticky, add a little more flour.

If the dough is too dry, add a little more yogurt.

ROLL THE DOUGH

Roll the dough out on a lightly floured surface into a rectangular shape.

Rolled dough with butter and cinnamon sugar.

ADD THE FILLING

Spread the butter over the dough.
Sprinkle over the sugar and cinnamon evenly.

ROLL AND SLICE

Roll the dough tightly into a log.
Slice into mini cinnamon rolls.

Sliced cinnamon buns before baking.

BAKE

Place the rolls on a baking tray.

Bake at 180°C for 15–20 minutes until lightly golden.

Air Fryer Option:
Air fry at 180°C for about 10 minutes.

MAKE THE FROSTING

Mix the icing sugar and smooth cream cheese until creamy.

Drizzle the frosted cream cheese topping over the warm rolls.

❓FAQS

Why is my cinnamon roll dough sticky?

If the dough is sticky, simply add a little more flour until it forms a smooth dough ball. The dough should be soft but not sticky. If it feels too dry, add a small spoon of Greek yogurt.

Can I make these cinnamon rolls with plain flour?

Yes. If using plain (all-purpose) flour, add ½ teaspoon baking powder to help the dough rise and stay light and fluffy.

How do I keep cinnamon rolls gooey?

For extra gooey cinnamon rolls, add a little extra butter and cinnamon sugar to the filling and frost the buns while they are still warm so the icing melts slightly.

Can I freeze cinnamon rolls?

Yes. You can freeze the baked cinnamon rolls in an airtight container for up to 2 months. Thaw and warm before adding the frosting.

Ingredients

Scale

Notes

Don't overmix: Mix the flour and Greek yogurt until the dough just forms a smooth dough ball. Overmixing can make the cinnamon rolls dense instead of fluffy.

Frost while warm: Drizzle the cream cheese frosting over the buns while they are still warm so it melts slightly and creates extra gooey cinnamon rolls.

Add extra cinnamon sugar: If you love extra sweet cinnamon rolls, sprinkle a little more cinnamon and sugar before rolling the dough.
