Prepare the Sauce:
Start by heating the olive oil in a large skillet over medium heat.
Add the finely chopped onion, and salt and pepper to the skillet and sauté until it becomes translucent and fragrant.
Once the onion is softened, add the garlic to the skillet. Allow them to infuse their flavor into the oil for a minute or two, being careful not to let them burn. Add the chopped oregano.




Next, pour in the tomatoes. Stir well to combine all the ingredients.
Let the sauce simmer gently over low heat for about 15-20 minutes, stirring occasionally and allowing the flavors to meld together and the sauce to thicken slightly.
If you prefer a smooth sauce, blend it with an immersion blender.
Once the sauce has reached your desired consistency, taste and adjust the seasoning with salt and pepper if necessary.

FREEZING:
Choose freezer-safe containers or resealable freezer bags for storing the sauce. Make sure the containers are airtight to prevent freezer burn and odors from affecting the sauce. Freeze for up to three months.
REHEATING:
To reheat transfer the sauce to a saucepan and warm it over low to medium heat, stirring occasionally. Add a splash of water if needed to thin out the sauce to your desired consistency.
