1 cup full-fat Greek yogurt

4 cookies of choice

1 teaspoon of coconut oil

Spoon the full-fat Greek yogurt into your container and smooth the top.

Gently push the cookies straight into the yogurt, spacing them.

Melt the chocolate with a small amount of coconut oil until smooth and glossy.

Pour the melted chocolate over the top, spreading it into an even layer.

Refrigerate for at least 5 hours, or until the chocolate has set and the cookies have softened into a cheesecake-like texture.

WHAT TYPE OF YOGURT WORKS BEST?

Full-fat Greek yogurt is essential. It’s thick, creamy, and sets properly. Low-fat or regular yogurt won’t give you that rich cheesecake-like texture.

CAN I USE DIFFERENT COOKIES?

Absolutely. This recipe works with almost any cookie, but Biscoff cookies are especially popular because they soften beautifully.
