BLUEBERRY TOAST (A HEALTHY BREAKFAST!)

Blueberry Toast (a healthy breakfast!) combines cream cheese with warm, sweetly cooked blueberries. When spread on toast, it tastes like blueberry cheesecake, but it's good for you! With only 4 ingredients and 15 minutes of your time!

Whether you're making this for breakfast, brunch, or a snack, toast with blueberries is a mixture of textures and tastes.

There's nothing quite like the simple joy of toast – warm and crisp. 💙

Then add a juicy burst of blueberries, and the smooth cream cheese is the perfect combination.

The honey adds a touch of golden sweetness, tying everything together.

For me, this reminds me of blueberry cheesecake, but healthier! 🫐

🥄 INGREDIENTS NEEDED AND SUBSTITUTION

  • Bread of Your Choice: Select your favorite bread, whether a rustic whole grain, a soft white, or a hearty multigrain. Gluten-free, or my favorite, is sourdough.

  • Cream Cheese: Opt for a smooth and creamy cream cheese to provide a base for the blueberries. You can also use Greek yogurt, ricotta cheese, or whipped cream.

  • Blueberries: Fresh or frozen, these little blue gems are packed with antioxidants and natural sweetness. If you don't have blueberries, use your favorite kind of berries. Raspberries, Blackberries, or Strawberries. Fresh or frozen.

  • Honey: A touch of honey adds a hint of sweetness to the blueberries. If vegan, use maple syrup.

🍋 TOPPING IDEAS

  • A sprinkle of cinnamon
  • Add a crunch by sprinkling chopped nuts (like almonds or walnuts) or seeds (such as chia seeds, pumpkin seeds, or flaxseeds).
  • Grate a bit of lemon or orange zest over the blueberry compote for a citrusy kick.
  • Toast some coconut flakes and sprinkle them on top.

  1. Prepare the Blueberry Compote:
  • If using fresh blueberries, rinse them thoroughly.
  • In a saucepan or microwave-safe bowl, combine the blueberries and a drizzle of honey. (Picture 1)
  • Cook on the stovetop over medium heat or microwave for a few minutes until the blueberries soften and release their juices. Stir occasionally to ensure even cooking. (Picture 2)

2. Toast the Bread:

  • While the blueberries are cooking, toast your bread to your preferred level of crispiness. (Picture 3)

3. Spread the Cream Cheese:

  • Once the toast is cooled, generously spread a layer of cream cheese on each slice. (Picture 4)

  • Spoon the warm blueberry compote over the cream cheese-covered toast. Make sure to distribute the blueberries evenly.

5. Drizzle with Honey (Optional):

  • For an extra touch of sweetness, drizzle a bit more honey over the top. This step is optional but highly recommended for those with a sweet tooth.

CAN I USE A DIFFERENT TYPE OF CHEESE?

Certainly! While cream cheese provides a classic and creamy base, you can experiment with other soft cheeses like mascarpone, ricotta, or goat cheese for unique flavor profiles. You can also use thick Greek yogurt or whipped heavy cream.

CAN I MAKE A LARGER BATCH OF BLUEBERRY COMPOTE AND STORE IT?

Absolutely! Prepare a larger batch of blueberry compote and store it in an airtight container in the refrigerator. It can be used for several days, and you can reheat it before spreading it on fresh toast.

MAKE-AHEAD, STORAGE, AND REHEATING

MAKE-AHEAD: While it's best to enjoy fresh, you can prepare the blueberry compote in advance and store it in the refrigerator. Toast the bread and spread the cream cheese just before serving for the best texture.

STORAGE: Store leftover berries in an airtight container in the fridge for up to 4 days.

REHEATING: Reheat the berries on the stove or in the microwave, on low heat, until warm.

4 slices of toast *good quality bread makes a huge difference. Sourdough is my preference.

1 cup blueberries (fresh or frozen)

2-3 teaspoons honey

4 tablespoons smooth cream cheese (heaped)

  1. Prepare the Blueberry Compote: If using fresh blueberries, rinse them thoroughly. In a saucepan or microwave-safe bowl, combine the blueberries and a drizzle of honey. Notes

Bread Selection: Choose a hearty bread with a good crust to provide a crunch and easily hold the toppings. Sourdough, whole grain, gluten-free, or artisanal bread are my favorites.

Cream Cheese Temperature: Allow the cream cheese to come to room temperature before spreading. This makes it easier to achieve a smooth and even layer on the toast.

Variety of berries: You can use different types of berries. Raspberries, strawberries, or blackberries. Fresh or frozen.

Make-Ahead: While it's best enjoyed fresh, you can prepare the blueberry compote in advance and store it in the refrigerator. Toast the bread and spread the cream cheese just before serving for the best texture.

Vegan Options? You can use a dairy-free cream cheese alternative to make the toast vegan-friendly. Additionally, choose a substitute for honey such as agave nectar or maple syrup.
